Quick Veggie Stir-Fry for Busy Weeknights
*Ingredients:*
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 medium-sized carrots, julienned
- 1 zucchini, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
*Instructions:*
1. Heat the vegetable oil in a large wok or frying pan over high heat.
2. Add the garlic and sauté until fragrant.
3. Add the carrots and broccoli to the pan and stir-fry for about 2 minutes.
4. Next, add the bell peppers and zucchini to the pan and continue to stir-fry for another 2-3 minutes. The vegetables should be brightly colored and slightly tender, but still retain some crunch.
5. Stir in the soy sauce and oyster sauce (if using), and season with salt and pepper. Toss everything together until the vegetables are well-coated in the sauces.
6. Remove from heat and serve immediately.
